I decided to try out a meatless recipe for Meatless Monday this week. I love lasagna but it’s not real great for me with acid reflux issues so I set out to find something without the red sauce. I really enjoyed this version of the recipe I found on the net, compiled of like 4 different recipes. Like all my recipes..
Slow-cooker meal. This week I wanted to start back on my cooking kick as I have been lazy as hell over the last 6 months. This past Sunday I decided to shop and prep a few dinners to cook on Tuesday, Thursday and the Weekend. I wanted something hearty, healthier, hot and wanted it to be ready to go by the time I got home. Chili was the thing.
I am always looking for the lighter version of my favorites that are healthier and taste just as good. I have finally found that here and its the easiest recipe taking minimal time.
Every year I make Irish soda bread for St. Patrick’s day. It’s my lil Tara tradition along with Corned Beef and Cabbage…Yum! I am the only one of my friends that likes it for some reason but that is okay, more for me!
Frittata’s are the easiest and heartiest breakfast or dinner item ever. I made my very first one recently and have been making it since. I love that you can add any veggie or meat to it to make it amazing.
Another day for a smoothie!
Today’s oatmeal smoothie was super thick but I did leave out the cup of ice in mine. It was super filling and great tasting.
I think I will try mangoes in place of raspberries the next time I blend this up.
