I love LOVE oven pancakes. My best buddie Kell introduced them to me. She makes the best ones ever! They are just sooo damn good with lemon and powdered sugar or with toppings. I can just about annihilate 2 of these suckers without blinking they are that good. Its the perfect Sunday morning or holiday brunch item when you want to serve something a little different. I am so making them this weekend. *drools* Hope you enjoy.
2 tablespoons butter
1/2 cup all-purpose flour
1/2 cup milk
1/4 teaspoon salt
Powdered sugar, if desired
Heat oven to 400°F.
In 9-inch glass pie plate, melt butter in oven; brush butter over bottom and side of pie plate.
In medium bowl, beat eggs slightly with wire whisk. Beat in flour, milk and salt just until mixed (take care not overbeat).
Pour into pie plate. If adding fruit arrange fruit quickly in the pie pan before placing in the oven.
Bake 25 to 30 minutes or until puffy and deep golden brown.
Serve pancake immediately. Drizzle with lemon juice (fresh) and sprinkle with powdered sugar.
