Serves 6

Pork Roast – 6 pound boneless pork shoulder
1 medium onion, sliced
2 cups of stock (your choice)

Trim fat from top of pork, leaving about an 1/8-inch thick layer of fat. Spread Roasted Garlic Rub all over pork.
In the bottom of the crockpot place in sliced onions and stock. Put pork, fat side up, into the crockpot for 6 to 8 hours. Pork will be in pieces. Serve.

Roasted Garlic Rub:
2 cups roasted minced garlic
5 tablespoons salt
1/4 cup coriander seeds, ground and toasted
2 tablespoons mustard powder
2 tablespoons dried thyme
5 tablespoons dried rosemary, finely chopped
2 1/2 teaspoons black pepper

Combine all ingredients in a food processor or it can also be mixed by hand in a bowl, combine well.

* Tara Notes:
When done the pork is so tender, juicy and falling apart. I’ll usually serve this with mashed potatoes and veggies. Or Rice and Veggies.
