1 tablespoon vegetable oil
1 large onion, chopped
4 garlic cloves, chopped
coarse salt and ground pepper
2 tablespoons tomato paste
2 tablespoons chili powder
1 teaspoon ground cumin
2 tablespoons unsweetened cocoa powder
2 pound ground turkey
2 cans (14.5 ounces each) diced tomatoes in juice
2 cans (14.5 ounces each) pinto beans, rinsed and drained
1 can of kidney beans (14.5 ounces) rinsed and drained

Toppings see below.
1. In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3 to 5 minutes.
2. Add tomato paste, chili powder, and cocoa powder. Cook, stirring, until mixture is fragrant, about 1 minute. Add Turkey, and cook, breaking up with a spoon, until no longer pink, 8 to 10 minutes.
3. Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10 to 15 minutes.
Toppings: Serve with toppings like fresh cilantro, chopped green onions(scallions), diced white onions, sour cream, crush tortilla chips or shredded cheese.
Easy Crockpot Method: You could also just place everything in the crockpot layered (uncooked turkey meat at buttom, onions, garlic, tomato paste, dry ingredients, beans on very top and water cover and cook for 3-4 hours.
* Tara Notes:
The method I like best is as follows. Tara’s Crockpot method: Omit the oil and cook the turkey meat, stirring to break up meat until no longer pink. 8-10 min. Add onion, garlic for about 5 mins. Stir in chili powder, cocoa powder & cumin. Cook until fragrant about 1 min. Add can tomatoes and 1 cup of water, salt and pepper. Reduce heat and simmer for 5mins. Then transfer mixture to crock pot add beans, continue cooking on low setting for 2-4 hours. I also tend to add finely diced veggies such as bell peppers, zucchini, squash to make it even more hardy a meal.
Serve with Toppings (above), cornbread and honey butter for a great meal!
